Bollinger Special Cuvée. One champagne a week.

Madame Jacques, named after her husband Jacques Bollinger who she lost during the Second World War, affectively named Tante Lily by the inhabitants of the Ay, a village in Champagne, could be seen daily inspecting her vineyards riding on her bicycle. The fuel was restricted during the Nazy occupation of France and the workers were serving on the front. Madame Bollinger with her empathy and skills managed to motivate the few labourers and produce champagne during those dark times.

She gained the name La Grande Dame de Champagne thanks to her communication and marketing abilities. She was a great strategist and visionary. She accepted nothing else but excellence. Each morning one could meet her in her office where she used to receive sales men, journalists or friends. In the evening, she organized dinners in her elegant dining room serving herself the guests with champagne while giving discrete information about her business. She was very aware on her personal charm using it to maximum to promote her champagne.

Bollinger Special Cuvée is one of my favorite champagne. I name it the “ The black tie” so essential to any wardrobe. The style: classic, elegant, inimitable. Ingredients: tradition, time, knowledge.


Bollinger Champagne is a unique style characterized by deliberate oxidation in old oak casks. The excellent base wine comes from Grand Cru and Premier Cru vineyards – many bought by Madame Bollinger- and many are aged in magnum glass bottles up to 15 years in the cellars in Ay. Special Cuvée is the result of a blend of young and aged wines crafted from about 60% Pinot Noir, Chardonnay and Meunier. After assemblage the wine spends up to 5 years in the dark cellars on the lees to gain its harmony and perfection.

Named Bolly with adoration by the British people, it emphasizes an aromatic complexity developed with the age.
It combines fresh citrus flavors and bakery with mature aromas of nuts and condiments topped by an intense oxidized taste. With a round and full body structure it is a mature and sophisticated wine. Just fabulous is standard bottle ( 0,75 l) , it shines in magnum (1,5 l) . Magnum is the favorite bottle format for champagne. Here the wine develops slower its roundness and a multidimensional aroma spectrum over a longer period of time, while preserving its vital freshness.
